Anardana is produced by sun-drying whole pomegranate arils (Punica granatum) until they become dark, sticky, and intensely tart. It is the dried equivalent of pomegranate molasses in solid form. Both wild (Himalayan sour variety) and cultivated varieties supplied.
A traditional ingredient in Indian chutney, chhole (chickpea curry), chaat masala, and meat marinades. Also used in Middle Eastern cooking and as a natural flavoring in confectionery applications.
