Pungent when raw, transforming into a rich onion-garlic flavor when cooked.
Asafoetida (Ferula asafoetida) is a resinous gum derived from the dried root of a giant fennel species. Despite its powerful raw aroma, it cooks out to reveal a mellow, savory, onion-garlic flavor. We supply pure resin and compounded (flour-mixed) hing in various strengths. Ferulic acid content and aroma profile tested.
An irreplaceable ingredient in Jain and Brahmin Indian cooking (where onion and garlic are avoided), dal seasoning, digestive supplement formulations, and traditional ayurvedic medicine.
